Sesame Pork Ribs

Sesame Pork Ribs

3/4 cup packed brown sugar
1/2 cup soy sauce
1/2 cup ketchup
1/4 cup honey
2 TB cider vinegar
3 garlic cloves, minced
1 tsp salt
3 lbs. country style pork ribs
1 med onion
2 TB sesame seeds toasted

Arrange ribs in 9x13. Mix first 8 ingredients and pour over ribs.  Place sliced onion over the top.  Cook 5 or 6 hours at 225 degrees.  When ready to serve place ribs on platter and sprinkle with sesame seeds.
(I have done this in the crockpot too and it is fantastic.)

Chicken Broccoli Dinner

Chicken Broccoli Dinner


Ingredients:
1 pkg. stuffing mix
1 cup water
chicken tenders
4 cups broccoli
1 cup shredded cheddar cheese
4 slices bacon, cooked
4 Tablespoons Ranch dressing

Assembly:
Combine stuffing mix and water. Top with chicken. Top chicken with broccoli. Top broccoli with cheese. Crumble bacon over cheese. Drizzle with Ranch dressing. Cover with foil. Freeze or bake at 400 degrees for 30 minutes.

Cheese and Pepperoni Calzone

Ingredients:
1 1/4 water
3C bread flour
1tsp salt
2T sugar
1tsp dry milk powder
1tsp italian herbs seasoning
2tsp yeast


Directions: mix all ingredients in bread machine. When the dough is ready let rest on the counter for about and hour. This recipe will make enough dough for 2 calzones. Roll out dough fill with your favorite pizza toppings! I used 1C of Ragu sauce, 8oz pizza shredded cheese, 25-30 pepperoni's and 1 small pack of pastrami. Fill your dough in the center and make small cuts on each side and braid them to close up the calzone. Mix 2T olive oil, garlic salt and basil- brush on before baking and top with parmesan cheese. Bake at 350 for 35-45 min.

Beef Hoagies

Beef Hoagies: 
1 1/2 lb. Angus Roast
2 c. beef broth
1 envelope of onion soup mix.

Directions: 
Crock pot on low 6-8 hours. Shred. Serve on hoagie buns, topped with provolone cheese.

1 1/3 cup butter
3 cups brown sugar
4 eggs
2 tsp vanilla or 2 tsp mint extract
2 TB water
2/3 cup cocoa
4 cups flour
1 tsp salt
1/2 tsp baking soda
chocolate chips

Cream butter and sugar. Add eggs, vanilla and water.  Add dry ingredients and chocolate chips.
Bake at 375 for  8-10 minutes.

Easy Crockpot Thai Pork

I found this recipe on this great blog. I thought it sounded really yummy for the crock pot. I hope you enjoy!

Other ingredients you'll need to add:
8 lime wedges for garnish
1/4 c. crushed peanuts for garnish
1/2 c. green onions chopped for garnish
6 servings of rice

Cooking instructions:
Dump contents of zip loc bag in crockpot and cook on low for 6 hours.
Shred or coarsely chop pork from crockpot. Add peanut butter from small bag to the liquid in the cooker; stir well to dissolve the peanut butter to make the sauce. Return pork to sauce and toss to coat the meat.
Serve in shallow bowls over hot rice. Sprinkle with green onions and peanuts. Pass lime wedges, to serve. The author also suggested adding steamed snap peas to this.

Crispy Ravioli

Okay, so I may have messed this one up a little tiny bit (maybe a-lot-a-bit, we'll see).  I combined a few recipes that I read to create my own that sounded simple and yummy.  When I prepared them for all of you, I skipped one minor (er, major) step.  I did not par-boil the ravioli before breading them.  So, I did a little research and I think that they are salvageable.  Instead of following the instructions that I wrote on the bag, you should follow these instructions:

Ingredients:
1 bag of frozen cheese filled ravioli
3 eggs, beaten
2 parts plain bread crumbs
1 part seasoned bread crumbs
1 part parmesan cheese
salt & pepper to taste

Beat eggs in a bowl. In a separate bowl, combine bread crumbs, cheese, salt, & pepper in a bowl.  Dip ravioli in egg, then roll in crumb mixture.  Flash freeze here, then store in gallon size freezer bag.

On serving day:
Thaw Ravioli.  Bake at 375 degrees for 12-15 minutes or until golden brown.  Serve with marinara on the side for dipping.

An alternative if you're concerned about not having enough liquid would be to add some marinara sauce to the bottom of the pan.

Taco Mac

I used a recipe from the Freezer Friendz website.  The only difference is that I added a can of chili beans to the bag.  Be careful thawing the bag - it will be soupy.  There is a lot of liquid in there to cook the macaroni.

Beef Fajitas

What's in the bag:
1 1/2 lbs flank steak sliced thin
1 bell pepper (red & yellow)
1 sliced onion
2 t. garlic powder
1 t. chili powder
1 t. cumin
salt
14 oz. can diced tomatoes with green chili's

Another bag: 12 Tortilla's

Cooking Day: Place all ingredients (not tortillas) in crockpot and cook on low for 6-8 hours.

Overnight Maple & Brown Sugar Oatmeal

This recipe came from my favorite freezer cooking website www.onceamonthmom.com.  You can link to the recipe here.  I hope you enjoy it.  I'm looking forward to waking to the lovely smell in the morning!  

2 2/3 cups steel cut oats
1/4 cup brown sugar
2 Tbsp butter
2/3 tsp salt
1 1/3 tsp cinnamon
1/2 cup pecans
1/3 cup maple syrup
8 cups water


Directions:

Coat inside of a 4-5 quart slow cooker with cooking spray. Add all ingredients to slow cooker and stir. Cook for 7-8 hours on low. Stir before serving.

Freezing Directions:

Place maple syrup in pint freezer bag. Place all remaining ingredients, except water, in gallon freezer bag. Label and freeze. To serve: Thaw in fridge. Place in slow cooker, add water, and cook for 7-8 hours on low. Stir before serving.
