Ham Loaf

This is an old family favorite from growing up... my mom's recipe, to boot! Hope you enjoy!

Ham Loaf: Sauce:
1 lb fresh ground pork 3/4 cup brown sugar
1 lb ground cured ham 1/2 cup vinegar
1 cup bread crumbs 1/2 cup water
1 egg 1 teaspoon dry/ground mustard
1 teaspoon salt
1/8 teaspoon pepper
3/4 to 1 cup milk

1. Mix all ground meats together (or cheat like me and buy the meat already ground and mixed from the meat market)
2. Add remaining ingredients and mix well.
3. Shape into a loaf (this is where I froze)

On serving day:
1. Thaw ham loaf
2. Put loaf in a loaf pan and dust with flour
3. Bake at 350 degrees for 1 hour
4. Make the sauce by mixing all ingredients and bring to a boil on the stove top
5. Pour the sauce over the ham loaf and bake an additional 30 min - 1 hour, basting occasionally if you think of it.

We love this meal served with rice and use the extra juices on top of the rice. Also yummy with fresh pineapple on the side!

Angel Chicken by Amanda

This is a recipe that I found here. It's a great place for freezer meal ideas!

To prepare from the freezer:
Put chicken on bottom of crock pot. Pour contents of sauce on top of chicken. Cook on high 3-4 hours. Shred or keep chicken in tenders. Prepare pasta and serve the chicken and sauce on top of noodles. Enjoy!
